Sushi Awase-zu

Ingredients

  • 1 cup Rice Vinegar, you can substitute white vinegar, if necessary
  • 2/3 cup Sugar
  • 2 tablespoons Salt

Directions

This is the seasoned vinegar mixture that is sprinkled on rice to make sushi.  How much you add to the rice is a matter of taste.  Some people prefer a fairly strong vinegar’d rice flavor and others prefer a more subtle seasoning.  So, apply to fit your taste.

Add all ingredients to a sauce pan and bring to a boil till sugar and salt are completely dissolved.  Cool and apply to hot rice.

If you have more than you need, you can keep this in the refrigerator for up to a month.
