Ingredients
- 4 Chicken Breasts
- 6 cups Water
- 1 teaspoon Grated Ginger
- 2 1/2 teaspoons Salt
- 1/2 cup Green Onions, cut to 1
- 3 package Long Rice
- 3-4 sprigs Chinese Parsley, finely chopped
Directions
As always, this is a simple recipe for making another island favorite. Visitors to the islands often encounter this dish for the first time at one of the many luau's, since its a regular on the buffet line. You should be able to find the long rice at your local Asian market.
Cover chicken with water; add ginger and salt; cook for 40 min. on medium heat.
Bone chicken and cut into bite size pieces. (I prefer to strip and pull into bite sized strips, rather than using a knife to cube them, but its up to you.) This can be done ahead of time.
Add long rice to 6-cups of boiling water for 10 minutes.
Drain and cut into 3-4" lengths.
Combine chicken, long rice, green onions, broth and cook for 15 minutes.
Sprinkle with minced parsley and serve.
